Jersey oysters among the best, says London guild

Stephen Pini, executive chef for the ancient Fishmongers’ Company in London, and members of his catering team, sampled the oysters yesterday when they were taken to the Jersey Oyster Company beds at low water.

The company – which is one of the most ancient of the City Guilds – frequently visit food-producing regions in the British Isles and elsewhere to source new products and to meet producers.

The nine-strong party – which included the guild’s fishery inspectors and fisheries project officer Dr Eleanor Adamson – also met fishmongers, took a tour of Jersey Dairy, met local chefs and dined at leading restaurants.

Mr Pini said: ‘The oysters were some of the best I have tasted and they were a really nice size. I use a lot of oysters from the UK and I have just discovered that one of my suppliers is supplied by the Jersey Oyster Company so I could possibly be able to get hold of them.

‘Some of the other chefs that are here with me are not that keen on oysters so this trip has challenged their views.’
